The “James Beard Culinary Mix” comes on the tails of the Kuro culinary team’s recent trip to New York City in October and November 2016 as guests of the James Beard House.
Kuro Executive Chef Alex Becker, along with Kuro Pastry Chef Ross Evans, prepared innovative Japanese dishes like lionfish with daikon, naganegi, and brown butter–tosazu sauce for a packed house at the JBF House on October 18 for the “ South Florida New-Style Japanese ” dinner.
Again on November 6 for the “ Savor Seminole Gaming ” event, Becker delighted attendees with numerous hors d’oeuvres and dinner plates, including Ideue Farm wagyu beef with pomegranate and fennel.
Becker and Evans represented the flavors of foods in Japan as well as Florida’s Seminoles, known for their deep connection to the land and transforming simple ingredients into flavorful dishes. The state’s bounty from surf to turf is reflected in the Seminole’s casino restaurants that bond together diverse disciplines such as butchery and sushi.
Seminole Hard Rock Hotel & Casino in Hollywood, Florida, debuted Kuro in summer 2015. The new-style Japanese restaurant features contemporary artisanal dishes using both locally sourced edibles and ingredients imported directly from Japan.
In addition to serving as the executive chef of Kuro, Becker oversees all of the Seminole Hard Rock Hotel & Casino’s restaurants as the Creative Culinary Director. Becker has additionally been accepted into the prestigious Court of Master Sommeliers, the highest achievement in the wine world. Becker started the globetrotting chapter of his career at Ristorante Gardenia in Turin, Italy, a Michelin-starred restaurant. Becker then turned his hunger for culinary intellect to Japanese cuisine. This led to a seven-year career at Nobu. Later, as Corporate Executive Chef of Katsuya in Los Angeles, he opened multiple restaurants for the brand across the globe.
